Stir Fry Veggies with Hummus
This is a fab super quick midweek meal for the whole family.You will need:a selection of sliced Vegetables to stir fry - e.g. onions, peppers, broccoli, baby corn, brussel tops, carrots etcCoconut oilJuice of 1 lemonHummusSimply heat up some coconut oil in a large frying pan or wok. Throw in all the vegetables and cook until tender.Remove from heat, squeeze the lemon juice over the top and add a big dollop of hummus! done!
