Green ‘Chicken’ Salad

Surprisingly simple & delicious salad, recipe serves 3-4

You will need the following:

1 Tablespoon Coconut Oil / Butter

300g Vegideli Chicken Pieces (any chicken substitute will work)

1 Lettuce or Equivalent Leafy Green (I used Kale in this recipe)

10-15 Cherry Tomatoes

1 Avocado Chopped

1 Yellow / Orange Pepper, sliced

6 Baby Cucumbers, sliced

Small Handful Pitted Black Olives

1/4 Red Onion, chopped

Handful Sprouts

2 Tablespoons Olive Oil

Juice of 1 Lemon

Cook the chicken, I used olive oil and jerk seasoning for this salad, season as you wish. Remove from the heat and once it's cooled, chop into strips.

In a large bowl, combine the chicken, greens, tomato, avocado, pepper, cucumber, olives, onion and sprouts.

Top with olive oil, lemon juice and seasoning.

Combine well and serve.
