Courgette Spaghetti with Pesto

This raw dish is such a treat, refreshing and full of flavour. I love it. It takes 10 minutes to prepare and is such a pleasant surprise when your tastebuds do cartwheels with joy - lol - well that’s what it feels like to me.

Makes 2 generous servings

You will need:

2 Courgettes, washed

1 Clove of Garlic

1/2 cup Pine Nuts

1 cup fresh Basil

2 tablespoons Flax oil

2 tablespoons Olive oil

Juice of 1 Lemon

Using a vegetable peeler or spiraliser make the courgette spaghetti and pop into a large serving bowl.

In a food processor combine the basil, pine nuts, flax and olive oil and the lemon. Mix well.

Pour over the noodles, combine well and serve. Hope you enjoy it as much as I do.
