Makes 2 servings.You will need the following ingredients:1/2 Cup Cooked Quinoa1 Tablespoon Coconut Oil / Butter2 EggsHimalayan Rock Salt & Black Pepper to taste1 Chopped Avocado1/2 Lemon2 Tablespoons Spring OnionCook the eggs, season to taste.Serve the quinoa, topped with egg, avocado & spring onion.Drizzle lemon juice over the dish and tuck in.
