Granola from Heaven

Granola, fruit & yogurt on my big workout days feels a bit like I'm eating heaven in a bowl !! Simply a perfect way to start, or finish the day. 

I make fresh granola every week and take a tub with me to the gym for my post workout meal. Always willing to share over a coffee, I am constantly asked for the recipe. So I thought I would give you an update for this week. 


Granola with hemp seeds, buckwheat and other heavenly ingredients 💜

You will need the following :: 

250g chopped fruit (I used apricots)

200g dessicated coconut

250g unroasted buckwheat

250g organic hemp seed

1kg jumbo rolled oats

Sweet freedom (to taste)

Turn on the oven grill, I turn mine onto 250 degrees & the grill on.

Then I layer the dry ingredients in a baking tray. 


Mixing them together well as I go. You can add other nuts, seeds, spices here as you wish. Once the oven is ready I pop the tray into it and set the time for 2 minutes. 


Make sure you watch the mixture as it can very easily burn if you forget about it. (Been there done that- lol) 


Once it's been in the oven for the first 2 minutes drizzle the sweet freedom over the warm mixture and fold it in. Pop it back in the oven for another 2 minutes.

Repeat this process until you've added enough sweetener (I usually use about 1/3 of a tube - around 125g) and the mixture is roasted enough for you. 

Wait for it to cool & load your bowl !!

4 tablespoons granola (45-60g)

1/2 cup fruit (I love berries so usually go for blueberries or raspberries)

150g soya yogurt 

And you're set !!

So for those who count macros here is the split ::

1 serving = 60g

You also have the option of soaking 60g of the mix overnight - I've added a few pitted prunes to this but berries are just as yum. Banana I add the next morning, only because they go brown.
