Tofu Scramble

Breakfast usually consists of a huge protein shake or fruit, nuts & soya yogurt. When we go out for breakfast however the options available usually consist of toast, porridge, fruit or roast veggies and sometimes these carb heavy options just don't cut it.

Sometimes I want protein & I find that this ticks the boxes for me.

You will need the following for two people:

1 300g carton of Silken Tofu, hand whisked

2-4 tablespoons of Nutritional Yeast (add to taste)

Himalayan Salt, Pepper & Herbs to taste

4 English Muffins or Slices of Sourdough, toasted

A selection of veggies, I use tomatoes, mushrooms & onions, which are pre-cooked and ready on the side to add to the scramble.

Start by adding a teaspoon of olive oil to a frying pan and heat, once the pan is ready pour in the whisked tofu. The mixture doesn't bind so simply mix it in the pan. Add herbs, seasoning and veggies then add the nutritional yeast and mix again. Allow the scramble to bubble away until it is heated through.

Pop the muffins into the toaster & put the kettle on for some tea!

Load the toasted muffins with the scramble, add more seasoning if you like plus a dash of tabasco & enjoy!

Chocolate with tea is optional :)
