Spinach and Chilli Tofu 'Omelette'
You will need:2 packets of silken tofuSalt and pepper to tastepinch of Turmeric or Saffrona handful of chopped Spring onions1 Green chilli, choppeda couple of handfuls of Spinach, peas & any other green veg you have lying around!Blend the tofu with salt, pepper and turmeric/saffron. Heat some oil in a pan and add the chilli and onions. Saute for a few minutes, add the veg & continue to cook for a couple of minutes until the spinach wilts.Pour the tofu mixture in and fry on medium-high heat for about 10 minutes (watching it doesn't burn - I have done this!) then place under a medium grill for another 10 minutes until the top is golden brown.Be warned - this 'omelette' is a little fragile. You can add a couple of tablespoons of spelt flour to help bind it if you want.Serve with either a green salad or steamed green beans/broccoli etc.
